Course Content for Basic Food Hygiene Certificate in Retail - level 1

This level 1 course follows the syllabus set out by the occupational sector skills council for retail: Skillsmart Retail. It is recognized as part of the occupational standards and additionally the industry standards. It is recommended for all who sell low risk food stuff and as an introduction to level 2 and 3 food safety.

The course content is in 12 sections.

  • Introduction
  • The importance and use of correct ppe
  • Correct hand-washing techniques
  • The importance of reporting an illness
  • The importance of wound dressings
  • Good personal behaviour and individual responsibility
  • Keeping the work area clean + tidy
  • Waste disposal
  • Food safety hazards
  • Contamination and cross-contamination
  • Correct procedures for working with and storing food
  • Hazards caused by pests

Duration

The course takes approximately 1 hour, but can be taken at the speed of the user.

Testing

When ready, the candidate can progress to take the multi-choice test comprising 20 questions, of which 15 must be answered correctly.

Certification

The questions are then marked electronically, instantly, and the successful candidate may print out their city and guilds accredited certificate from their (or a nominated) PC. Candidate details of success are recorded on City and Guilds database, “the walled garden”.

  • AThis is up to you, but we always would recommend a level 2 course when clients are vulnerable (i.e. the elderly).
